Maple Dijon Salmon
This maple dijon salmon is a simple, balanced meal that pairs tender baked salmon with roasted potatoes and a fresh rainbow chickpea salad. It’s straightforward to prepare and works well for both weeknight dinners and meal planning.
Ingredients
Roasted Potatoes
6 medium potatoes
2 tbsp olive oil
2 tsp parsley
2 tbsp parmesan
Maple Dijon Salmon
4 x 130-140 salmon fillets
Maple Dijon glaze (see below)
Maple Dijon Glaze
1/4 cup maple syrup
3 tbsp dijon mustard
1 tsp apple cider vinegar

Directions
Preheat oven to 350°F. Line 2 cookie sheets with parchment paper or tinfoil.
Roasted Potatoes
Chop 6 medium potatoes into bite-sized pieces and place in a bowl.
Add dash of salt + pepper, 2 tsp dried parsley, 2 Tbsp parmesan, and 2 Tbsp olive oil. Mix until potatoes are evenly coated.
Pour onto a lined cookie sheet and bake for 20 minutes.
Maple Dijon Salmon
Place 4 salmon fillets onto the second lined cookie sheet.
Combine maple syrup, dijon mustard and apple cider vinegar in a small bowl or mason jar. Mix well. Measure out 3/4 cup of maple dijon glaze to use on your salmon. Set aside remaining sauce.
Using the back of a spoon or a basting brush, coat each side of salmon pieces with 1 tsp of maple dijon glaze.
Bake for 10 minutes. Add 1 Tbsp maple dijon sauce to each piece, and bake for another 5 minutes.
