Spinach Lentil Soup

This spinach lentil soup is a straightforward, freezer-friendly recipe made with pantry staples and minimal prep. It’s filling without being heavy and comes together easily in one pot.

A cozy bowl of spinach lentil soup with visible lentils, shredded carrots, onion, and wilted spinach in a light tomato-based broth, served simply with a spoon.

Ingredients

  • 1 cup shredded carrots

  • 1 large onion, chopped

  • 1 tbsp olive oil

  • 6 cups water

  • 1 (16oz) jar salsa

  • 1 1/4 cup dried lentils, rinsed (or 1 can rinsed lentils)

  • 3/4 tsp each, salt & pepper

  • 10 oz fresh spinach, torn up

Directions

  1. In a large sauce pan, sauté carrots and onions in oil until tender.

  2. Add water, salsa, lentils, salt & pepper.

  3. Bring to a boil, then reduce heat.

  4. Add spinach, and simmer for 10 minutes.
