Spinach Lentil Soup
This spinach lentil soup is a straightforward, freezer-friendly recipe made with pantry staples and minimal prep. It’s filling without being heavy and comes together easily in one pot.
Ingredients
1 cup shredded carrots
1 large onion, chopped
1 tbsp olive oil
6 cups water
1 (16oz) jar salsa
1 1/4 cup dried lentils, rinsed (or 1 can rinsed lentils)
3/4 tsp each, salt & pepper
10 oz fresh spinach, torn up
Directions
In a large sauce pan, sauté carrots and onions in oil until tender.
Add water, salsa, lentils, salt & pepper.
Bring to a boil, then reduce heat.
Add spinach, and simmer for 10 minutes.
